I will be graduating in May 2007 from Virginia Commonwealth University (ABET certified) and can not find a job as a Process, Production, or Environmental Engineer. I do not have a great GPA only 2.7 but I did work for Honeywell International in one of the production plants for 1 1/2 years as a Co-op and I have done polymer reasearch on nano fibers for several companies. I also will be Six Sigma Greenbelt certified before I graduate. So why can’t I find a job? The only thing which could be holding me back is my GPA or so I think.

Are you getting interviews? If not, it is probably your resume.
If you are getting interviews, but not offers, then I would guess its your interviewing techniques.
Are you applying to the right companies, in the right locations? Yours is a very specialized education which cuts down your job opportunities.
Your mentioning of your GPA makes me wonder too. Call your school and ask the Registrars office what information is released with a degree verification. My alma mater will only confirm that 1. the former student did attend and 2. if they graduated or not and their degree. They don’t release GPA’s. If your school doesn’t release it, you may be providing too much information. Which is common for engineering brains.
Also, keep in mind that your resume needs to appeal to an HR person who may, or may not, understand anything about what you do. You need to tailor the resume to the end reader. Save your super technical resume to send directly to a working manager.
